The more time I spend away from home, the more I miss the importance of the few yet very important people in my life! Especially during Christmas!
My best friend, Alia and I used to have long catch up sessions over Chai, sitting on my balcony swing, enjoying whatever weather we had in my home town.We have always lived in different cities (if not countries) so it was taken for granted we had more than one topic to catch up on!I think Chai does that to you..connects you on another level!
This Christmas, I decided to do all DIY Christmas pressies! My friends in London have asked me more than once to make them Chai Latte, and so some of you guys are getting my very own Homemade Chai Latte Syrup!

2 cups water
4 regular tea bags
5 x 1 inch piece ginger
7 cardamon pods
7 whole cloves
1 cinnamon stick
1 Vanilla Stick (I put my Vanilla Stick in my Sugar Jar, But you can use Vanilla Sugar too)
1/5 cup raw sugar (or less in case you don’t like sweet Chai..You can always add later!)
2 1/2 cups Milk (Soy/Almond milk works great too)
2 Cups water
3 Whole Peppercorns
1/2 Teaspoon of All Spice or 1/3 Teaspoon of Nutmeg
Combine water, tea bags and all the spices and bring to boil. Let it simmer for 5-8 minutes on medium heat, till you can see the water converting into Syrup.
Remember more the sugar, more syrupy the mixture. Worry not if it is watery after the 8 minutes boil, as consistency has nothing to do with the flavor.
After a good boil, let the tea cool, and strain into a bottle. Remember to give your tea bags a squeeze as it would have retained all the spicy juices.
I have a Lavazza Espresso Coffee Machine, so I just Steamed some milk to make it Frothy. If you do not have a a steamer, then you can shake the milk in a jar and microwave it to make it frothy. See more here.
Add 2-3 Tablespoon full of Syrup in your Mug, and whilst tilting your mug, pour the foamy milk. Be Sure to sprinkle some Cinnamon on top to give that yummy winter flavor.
Enjoy with a few friends, or treat yourself on a winter afternoon with a book in hand. Open fireplace optional
